How to Store Almonds: In-Shell, Shelled and Long-Term

How to store homegrown and bought almonds in the shell and shelled, ideal temperature and humidity, how long almonds keep, freezing, and preventing pests and rancidity.

Dry almonds keep well because of their low moisture, but their oils slowly turn rancid with heat, light and air. Stored cool, dry and airtight, shelled almonds keep for about a year in the fridge and two years in the freezer; almonds in the shell keep even longer.

Before Storage

Make sure nuts are thoroughly dry (kernel moisture around 6% or less). Damp almonds grow mould and can develop aflatoxins. Discard any shrivelled, stained or insect-damaged nuts.

Pests in Stored Almonds

Indian meal moths and beetles can infest stored nuts. Freezing nuts for 2–3 days after harvest kills any eggs or larvae; then store airtight.

Signs of Spoilage

  • Bitter, sour or paint-like smell: rancid.
  • Mould or dark spots: discard.
  • Webbing or holes: insect damage.
