Garlic comes in two main groups. Hardneck garlic grows a stiff flower stalk (scape), has fewer, larger cloves and stronger flavour, and is best for cold winters. Softneck garlic has a soft neck you can braid, more cloves and much longer storage, and is best for mild climates.
